Pollo en Rajas Recipe

As you all know, Al and I have been on this crazy diet, which of course hasn’t done a damn thing for me! Not one pound! Not one freaking pound! I mean seriously I’m one step away from starvation! So yesterday, I had an epiphany. Not sure how, considering the lack of nutrients in my system! But I did! My epiphany… I am a FOODIE!! A REAL FOODIE! Not a fake one. Not one that pretends. But just an all around, food crazed, can’t imagine my life without it, FOODIE! And what does a foodie do, EAT!
–Ahhh sorry for the venting session but gosh that felt good to get out!

Okay, so first call of duty, convincing Al A.K.A. The Food Nazi to break his diet. To be the man I fell in love with. The man who lives life on the edge (I know how to work it, don’t I?! Hehe!) And I knew just how to get him there. I would seduce him by cooking one of his new favorite dishes! Pollo en Rajas con maíz en crema. Translation: Grilled chicken with Poblano peppers in creamed corn! YUMMY!!! I’m salivating just thinking about it. And boooyyyyyy did it work like a charm! I had my old Al back and I was loving every minute of it!

Alright so let’s get to it! Pans out, stove lit, and last but not least mouths salivating. Just what was needed for a finger licking meal! I started by seasoning the chicken and putting it on the grill. While I had the chicken going, I simmered heavy cream, butter, milk, flour, diced Poblano peppers, and sweet corn in a pan. Oh man the aroma coming from my kitchen was to die for! Once the chicken was thoroughly cooked, I incorporated all the pieces into the mixture and let it marinate for about 30 minutes. Goodness takes time, people! Side dish, yellow rice. I mean you can’t have a Mexican dish without of side of rice, right?!! The best part was upon us and we were seconds away from the moment I had been dreaming about for weeks. So, I picked up that spoon and had my very first bite.

Seriously this was the best thing that had happened to me in weeks! Okay, okay, I ‘m exaggerating. But come on you should know me by now. But really, really it was sooooo good! The sweet corn and the hot peppers were the perfect balance of sweet and spicy! The sauce on the rice was the perfect combination. I couldn’t ask for more. It was D-E-L-I-C-I-O-U-S!!! As I always say, it was a little slice of heaven! At least what I picture my heaven to be! Trust me this dish will not disappoint! Definitely a must try!!

    I loveeeeeeeeeee the description of the food, but I loved even more how you described getting “the old Al” back, lol!!! ps: this dish looks yummy, yummy, for my tummy ;-)
