Shepard’s Pie Recipe!

Tambor de Picadillo Recipe (Cuban Shepard’s Pie) – Page 151-152

Mashed Potatoes:

3 pounds of gold potatoes (peel and cut into cubes)
6 garlic cloves
1/4 cup of milk
4 tablespoons of butter, melted
1/2 cup of warm heavy cream
2 teaspoons of salt
1/2 teaspoon of white pepper

Picadillo (Ground beef)

1/4 cup of olive oil
2 garlic cloves, minced
1 medium onion, diced
1 small green pepper, diced
1 pound of ground sirloin
1/2 cup of dry white cooking wine
1 cup of tomato sauce
2 tablespoons of tomato paste
1/2 teaspoon ground cumin
1/2 teaspoon of ground oregano
1 teaspoon of salt
1/2 teaspoon of pepper
1/4 cup of grated Parmesan cheese


Mashed Potatoes

1. Bring two quarts of water to a boil in a large pot
2. Add potatoes and whole garlic cloves
3. Reduce heat to medium and cook the potatoes partially uncovered (once you can put your fork through
them they are finito!)
4. Combine milk, butter and cream in a bowl
5. Drain potatoes and discard garlic cloves
6. Return potatoes to pot
7. Using a handheld mixer beat the potatoes
8. Add milk mixture little by little while still beating
9. Once mixture is completely incorporated add salt and pepper

Picadillo (ground beef)

1. Heat half (only half- I almost missed that!!) of the olive oil in a large pan over medium heat
2. Add garlic, onion, and bell pepper
3. Sauté for 5 to 7 minutes until veggies are tender
4. Add ground beef (the meat should make a searing sound, if not turn up the heat)
5. Sauté meat for 10 to 15 minutes breaking up the meat (ensure the meat is no longer red)
6. Drain excess liquid from pan
7. Add wine, tomato sauce, tomato paste, cumin, oregano, salt, pepper, and remaining olive oil
8. Reduce heat to low and simmer uncovered for about 20 minutes
9. Stir occasionally

Putting it all together!

1. Preheat the oven to 350 degrees
2. Layer half the mashed potatoes evenly on the bottom of a buttered casserole dish
3. Cover the mashed potato layer with all the picadillo
4. Top with the remaining potatoes
5. Sprinkle Parmesan cheese over it
6. Bake for 20 to 25 minutes, until top of casserole turns golden brown


FYI- Al lost the pictures of the process, i.e. deleted them off his camera! I should kill him!
