4 Chicken breast halves, bone in, skins removed
1 Garlic clove
1 Bay leaf
1 Teaspoon salt, plus more as needed
1 Tablespoon tomato paste
2 Tablespoons olive oil
1 Medium onion, diced
2 Celery stalks, diced
1 Carrot, diced
1 Cup chopped malanga or potatoes
4 Ounces fideos or angel hair pasta
Lime wedge, for serving


1. Boil 2 quarts of water in a large pot.

2. Then add the chicken, garlic, bay leaf, and salt.

3. After put the heat on low, cover the pot, and let it simmer for about a 1 hour. Once the chicken is cooked through and looks opaque it’s done.

4. Transfer the chicken to a plate and set it aside.

5. Throw away the garlic, bay leaf and pour the stock in another container and let it cool completely.

6. Mix the tomato paste with 1/2 cup of stock in a small cup.

7. Heat the oil in the pot.

8. Then add the onion, celery, carrot, and sauté them for about 5 minutes, until the onion is soft.

9. Add the malanga, calabaza, the tomato paste mixture, and the stock.

10. The stock should cover the vegetables by 3 to 4 inches, if it doesn’t then add more water.

11. Boil the soup, and then reduce the heat to low. Then cover the pot, and let the soup simmer for about 40 min. until the vegetables are soft and tender.

12. Remove the chicken from the bone and tear it into pieces.

13. Add the chicken and the fideos to the stock and stir.

14. Boil the soup again, then turn off the heat and season the soup with salt and pepper.

15. Stir real well and add a squeeze of lime before serving.
