Tostones Recipe!

“Tostones” (Fried Green Plantains) -Page 97


2 cups corn oil
3 green plantains
Coarse salt


  • Heat 2 to 3 inches of oil in a large heavy pot over medium heat
  • Cut the ends off the plantains
  • Peel skin off with your knife

  • Cut plantains into 1 ½ inches
  • Place 4 or 5 plantains into the oil (Ensure oil is hot enough)
  • Fry plantains for about 2 minutes on each side

  • Remove and continue frying the remaining plantains in the same manner (leave oil over low-medium heat for second stage of frying)
  • Once you have fried all plantains, begin flattening them (I used the palms of my hands—The bottom of a plate can also be used)

  • Raise oil back to medium heat
  • Fry plantains a SECOND time for another 2 -3 minutes (This is the infamous step i forgot-refer to blog)
  • Transfer them to a paper towel lined plate
  • Let them drain and sprinkle with salt. Serve immediately.
