Arroz con Pollo Recipe!

“Arroz con Pollo” (Chicken with Rice) – Page 158

Ingredients:
¼ cup of olive oil
1 (5 to 7 pound) chicken, cut into 8 pieces or 4 or 5 large, bone-in skinless chicken breasts
Salt and pepper
3 garlic cloves minced
1 large onion, chopped
1 medium green bell pepper, chopped
1 (8 ounce) can tomato sauce
2 (5 gram) packets Goya brand Sazón con Azafrán
1 bay leaf
1 cup vino seco (dry white cooking wine), or 1 (12 ounce) can beer
2 cups of short-grain rice
6 cups of chicken stock
1 (8.5 ounce) can peas (do not drain)
1 (8.5 ounce) can roasted red peppers, chopped

Directions:

  • Heat oil in a large ovenproof pot over medium/high heat
  • Season chicken with salt and pepper

  • Add chicken to pot in batches (skin side down) for 3-5 minutes

  • Continue the process until all chicken is seared (lightly brown)

  • Take out chicken and set aside
  • Add garlic, onion, and bell pepper for about 10 minutes (veggies should be soft)

  • Then add tomato sauce for about 5 minutes. Let it simmer.

  • Add sazón, bay leaf, and vino seco and cook for 5 more minutes (I used a beer)

  • Add rice and stir until it is fully incorporated
  • Add 4 cups of chicken stock and the liquid from the canned peas (I added the peas and red peppers instead of using them for garnish as the recipe called for)
  • Stir
  • Add the chicken and top with as much chicken stock as your pot allows (leave a bit of space as this will boil)

  • Reduce heat to low. Cook for about 15 minutes
  • Transfer the pot, lid and all into the oven. (Ensure your pot is ovenproof!)
  • Bake for 30-40 minutes

  • Garnish the top with red peppers and peas.

Note: If you like this recipe soupy then follow recipe exactly, if you prefer it dry I would ONLY use 3 cups of chicken stock—in the entire recipe.

    Didn’t have a clue what I was going to cook for dinner tonight for the kids, thanks for the inspiration on the classic latin dish.
