Fritas & Papitas Recipe!

“Frita Cubana” (Cuban Hamburger) – Page 73

¼ cup of half and half
¼ cup of white bread crumbs
1 ¼ teaspoon of sweet peppers (I bought the Goya can and crushed them)
2 tablespoons of Worcestershire sauce
2 tablespoons of chili sauce or ketchup (I used ketchup)
1 egg, beaten
1 pound of lean ground beef (I used 85%/15%)
½ a pound of ground Spanish chorizo (I went to the meat market and had them grind it for me)
½ teaspoon of salt
½ teaspoon of pepper
3 tablespoons of olive oil
Dinner rolls (if you can get Cuban bread, definitely do it!)
Lettuce, Tomato, onions, and CHEESE!!! (Whichever kind you prefer)

1. In a bowl, mix the half and half, bread crumbs, sweet peppers, Worcestershire sauce, and ketchup/chili
2. Add egg and stir

3. In a separate bowl combine Chorizo, beef, salt and pepper
4. Add the half and half mixture to the meat and “Get your hands dirty!”

5. Divide meat into 6-10 equally sized balls (depends how big you want your burgers)

6. Heat oil on Medium- high heat and fry burgers to desired doneness

“Papitas Fritas” (French Fries) – Page 91

2 tablespoons of seat salt
2 to 3 cups of corn oil (I found that 2 cups was enough)
4 to 6 large red potatoes (I only used 4)

1. Fill large bowl with cold water and add seat salt
2. In a skillet heat up oil (when you think oil is hot enough drop a small piece of potato, if it sizzles the oil is ready)
3. While oil heats, peel and cut potatoes into slices and then sticks.
4. Place sticks into the cold water and give them a sea salt bath
5. Remove a third of the potatoes (fry in batches) and thoroughly dry them
6. Drop dried potato sticks into the oil

7. Repeat step 6 until all potatoes are fried
