After realizing that our cookbook was divided into sections –Appetizers, entrées and deserts, we had no other choice than to skip around. An entrée seemed like the perfect fit. It would set the threshold for the cooking adventures to come! At least that’s what I kept telling myself.

The recipe called for a few ingredients that we didn’t necessarily have in our kitchen. So, we bundled up (there was a huge snow storm outside) and off we went. When we arrived at the supermarket, Al and I decided to divide and conquer. He got the Parmesan cheese, the Basil, and the Chorizo. I ran down the aisles getting the tomato sauce, the heavy cream, and the paprika. Serrano ham, not such an easy find. Apparently supermarkets don’t readily carry it. But have no fear, we found it!

Back in the Pagan/Aguasvivas kitchen…

“Pour the wine” is how our first official cooking session began. I thought having a little wine in our system, would ease the anxiety. I mean after all, Al and I in the kitchen screams trouble! A few “Saluds” later and the cooking was well on its way.

We began to follow the recipe. Heat the olive oil in a large skillet, add the chorizo and Serrano ham, sauté the onions and peppers, sprinkle in the basil and paprika, and pour in the heavy cream. Let it simmer for 5-7 minutes.

As the clock ticked away, I realized I had a few notes to self:

1. We must get a stand for our cookbook- It makes it a lot easier to read the recipe and cook at the same time (Christmas is a few days away, wink wink!).

2. Never put oil on medium heat and then add things to it. Result: HOT OIL everywhere! Not so smart!

3. Try not to drop things on the floor. Mason (my son-A.K.A. the cutest dog you’ve ever seen) has completely taken over Al’s job as my little vacuum cleaner.

When the 7 minutes were up and the pasta was “al dente” the best part was upon us. Pour mixture (pasta & sauce) into a casserole dish and sprinkle Mozzarella and Cheddar cheese over it. Okay, so here is where we diverted, just a little bit! The recipe called for 1 cup of Mozzarella and ½ cup of cheddar. I’ll just say that we added a lot more than that. Come on, a little cheese never hurt a soul!

15 minutes later and a little slice of heaven came out of the oven. Our little diversion was so worth it. The cheese was as gooey and melted as it gets. It was a blissful sight!

Al and I sat down at our dinning room table, which is really the table that sits in our living room, which is also the table we never use, to eat our first official meal. A lady never eats and tells (hehe!), but I will say that Al had a few more servings than the recipe called for.

So from our kitchen to yours, let the cooking escapades continue!

Day 2- Next Sunday, but knowing us I will hedge my bets that it will be earlier than that! Does anyone say Saturday! Saturday going once, twice, sold! Talk to you then!

    OMG!!! Those pictures look SOOOOO good, I can almost taste it and smell the greatness coming out of your kitchen, hehe. Here’s wishing you guys good luck with all the future recipes…..and maybe I can come over and play “food critic”? LOL!!!
